Breakfast is the arguably the most important meal of the day for children going back to school. Eating a breakfast that is rich in protein, healthy fat and complex carbs will help to keep kids full and focused throughout the morning.

Protein and healthy fat are two nutrients that help promote satiety and nourish cells. Complex carbohydrates are needed to fuel our brains.

In this recipe, the breakdown of nutrients are as follows: Protein (egg), healthy fat (organic basting oil, however an even better option would be olive oil), and complex carb (sweet potato noodles). 

Not only do the red and green peppers add a bit of fiber to this recipe, but they add a pop of color to make this dish, appealing to kids of all ages!

  • 2 Tbsp Wegmans Organic Basting Oil
  • 2 cloves Wegmans Cleaned & Cut Peeled Garlic, thinly sliced
  • 3 mini sweet peppers, cored, seeded, thinly sliced
  • 1/2 of a 7 oz container Wegmans Diced Green Peppers
  • 1 pkg (12 oz) Wegmans Organic Sweet Potato Veggie Noodles (Frozen Foods)
  • Salt and pepper to taste
  • Wegmans Canola Oil Cooking Spray
  • 6 Wegmans Large Eggs

Preheat oven to 425 degrees. Heat basting oil in sauté pan on MED-HIGH. Add garlic; cook 1-2 min.

Add mini peppers and green peppers; cook, stirring, 1-2 min. Add sweet potato noodles; reduce heat to MED. Cook, stirring, about 3 min. Season with salt and pepper. Remove pan from heat; set aside. Let rest about 5 min.

Place 6 (6 oz each) ramekins on baking sheet; spray ramekins generously with cooking spray. Divide noodle mixture evenly among ramekins, forming a hollow in center of each. Crack 1 egg into each hollow.

Bake on center rack of oven 10 min. Remove baking sheet from oven; cover ramekins with foil. Return to oven; bake 8 min. Loosen nests from ramekins with fork; transfer carefully onto serving platter.
